If your looking for a preview of Project Server 2010 then Microsoft have made available a fully configured demo image which is now available online:

Access it directly here at the Microsoft Virtual Labs.

See the following blog link if you want some more info or are game to try your hands at the full Hyper-V version, even if you haven't yet installed Project Professional 2010 you'll find that link there also!
